A fleshy, powerful, long wine; ideal with a lamb chop cooked with Provencal herbs. The grapes are 100% de-stemmed and placed in temperature-controlled stainless-steel vats to macerate for around 25 days, with delestage at the start of fermentation, followed by two pump-overs a day. The wine is then placed in barrels for 12 months, with half of the cuvée aged in barrels.
