HARVESTING This is done by hand, allowing selective sorting of the harvest. We attach great importance to this point, which is of paramount quality. VINIFICATION AND AGEING Direct pressing in pneumatic presses. Natural settling (10 - 12°) and light fining. Low-temperature vinification constant between 14 and 16°. Fermentation time: three weeks minimum. Approximately one-third of the must is fermented in rooms and kept in wood. The remainder is kept in vats on fine lees. Blending takes place in May following the harvest.
Taste
Our white Lirac can be enjoyed young if you're looking for fruitiness, elegance and charm, but they can also be kept for four to six years.
