The Domaine de Trevallon was created from scratch by eloi dürrbach. In a piece of garrigue amidst pines and olive trees, the rock was dug out and the first vines planted in 1973: 50% cabernet-sauvignon and 50% syrah, a highly atypical grape variety in Provence today, which explains its downgrading to vdp and then igp alpilles. But make no mistake: this is one of Provence's finest reds, born of a firm determination to return to a blend that was common in the region before the phylloxera crisis. Here, Syrah brings Cabernet all its mellowness, without the jammy character of southern French Syrah, thanks to the freshness of this north-facing Alpilles terroir. terroir : limestone and clay soil, very stony: Hauterivian and Barremian, secondary era, Lower Cretaceous, less than 130 million years old. HARVEST : Harvesting began on September 8 with the Syrah. The Cabernet Sauvignon ended on September 21. vinification : vinification without destemming, yeasting or sulfur. Aged 24 months in tuns.
