- Origin: the estate's best and oldest vines. Sloping, south/southeast-facing, terraced vineyards above the commune of Chavanay. "Les Chaillets" is not a place name, but comes from the local name for terraces. - Terroir: muscovite granite. - Grape variety: Viognier. - Viticulture: vines planted at high density, 8000 /10000 vines per hectare. Insecticide- and pesticide-free, the number of treatm... ents is limited according to the weather, very little fertilizer is used, exclusively organic, respecting the balance of the soil and the plant. Control of vigor and yields, leaf thinning, green harvesting for better grape ripening. - Vinification: Grapes at the right stage of ripeness are harvested and sorted by hand. Pressing, alcoholic and malolactic fermentations in barrels, using natural yeasts. - Aging: 9 months in barrels, on lees, without racking, with regular stirring of the lees. - Production: approx. 20,500 bottles. Aroma
Powerful, deep and pure. Complex nose where varietal aromas (apricot and violet) intertwine with the mineral aromas of the terroir and the lightly toasted aromas of ageing (almonds).
Taste
Straight and slender on the palate, with a lovely velvety touch and sweet spices on the finish.
