The winemaker
Characteristics of the Clos des Boutes terroir and vineyard
The Clos des Boutes terroir lies to the south of that giving rise to Costières de Nîmes. Here, a terroir of rolled pebbles covers the soil and blends ancient sands with a limestone bedrock, an ideal place to produce quality wines. Sylvain Boutée, owner and winemaker, cultivates his vines in the most natural way possible, favoring organic farming since 2004 and biodynamic farming since 2012. The vineyard benefits from ecological zones, and winter grazing of the vines is essential. The grapes are harvested entirely by hand and stored in crates weighing no more than 15 kilos.
The Clos des Boutes estate wines
The estate boasts vins de France as well as AOP and IGP wines.
- Cap au Nord - AOP Clairette de Bellegarde Hand-harvested and aged on lees in Burgundy barrels, this is a fresh, subtle white wine whose tasting reveals pleasant mineral and floral notes to enjoy with white meats, fish or cheese.
- Le Pluriel - AOP Costières de Nîmes Aged in vats for six months, this is a digestible, fresh wine with a gourmet nose of red fruits, an energetic palate and immediate pleasure.
