In a few words ...

The wine appears in the glass with a crimson color. The bouquet is aromatic, with notes of ripe black berries and spices. On the palate, the complex aromas are complemented by a fine suppleness that ends with a persistent finish full of finesse. After careful harvesting, the grapes are almost entirely separated from the stalks and poured into concrete vats. In the vats, the must undergoes a temperature-controlled initial fermentation. The wine remains in the vats for 2 to 3 weeks, and is pumped over twice a day during this period to extract maximum aromas from the skins. A second malolactic fermentation takes place for 4 to 6 days at 25°c before the wine ages for a further 18 months in stainless steel storage tanks. The wine is then bottled and ready for sale. In 1748, antoine quiot bought his first 8 hectares of châteauneuf-du-pape, in addition to his vineyards on the banks of the rhône. In 1793, his grandson jean baptiste enlarged the estate by purchasing the 'tour de lhers', a 100-hectare estate that had been confiscated during the French revolution and had become state property. The family built a house there from the stones of the old château, in which they still live today. Following a marriage, the land around the old lazaret also became the property of the Quot family, after which the headquarters of the central administration were transferred there. During the great epidemics of the 17th and 18th centuries, the old hospital ('vieux lazaret') was used as a quarantine station and for the treatment of patients. Allergene:enthält sulfite
