In a few words ...
Harvesting: this must be done by hand, allowing selective sorting of the harvest. We attach great importance to this point, which is of prime importance in terms of quality. Vinification and ageing: After complete destemming, vinification is carried out by punching down, followed by 15 to 20 days of maceration to ensure maximum extraction of tannins and coloring matter. After malolactic fermentati... on, half the blend is aged in 228-litre pièces bourguignonnes, the other half in vats. After a selection of our best cuvées destined for bottling at the domaine, the wines are blended into a single assemblage. Bottling takes place around 18 months after the harvest. The appellation Châteauneuf-du-Pape is part of the region of Vallée du Rhône from France which include Chateau Mont-Redon and its 5 cuvées. Spread over The Rhone Valley and its rich, complex terroirs. The region is divided into two distinct subregions: Northern Rhone (known as Rhône Septentrional) and Southern Rhone (Rhône Méridional). In the former we find strong wines in beautiful colours with warm, spicy notes, produced by vineyards that stretch 4,700 ha along the Rhone. The latter, with an area of 71,000 ha, is much more important, and this is evident of course in its annual production of red, rosé and white wines quite unlike those of the Northern Rhone., this region is 3 million hectolitres per year of red wines, rosés, dry and sparkling white wines, and natural sweet wine..
