Harvesting: this must be done by hand, allowing selective sorting of the harvest. We attach great importance to this point, which is of prime importance in terms of quality. Vinification and ageing: After complete destemming, vinification is carried out by punching down, followed by 15 to 20 days of maceration to ensure maximum extraction of tannins and coloring matter. After malolactic fermentation, half the blend is aged in 228-litre pièces bourguignonnes, the other half in vats. After a selection of our best cuvées destined for bottling at the domaine, the wines are blended into a single assemblage. Bottling takes place around 18 months after the harvest. Once bottled, the wines rest in our cellars for at least 4 to 6 months before shipping.

The nose reveals intense notes of ripe red fruits and spices, combined with hints of smoke.
