The winemaker
An estate with nearly 2,000 years of history
Baulieu belonged for a long time to the Counts of Provence, then Henri III made it a fief in the 16th century and several great Provencal families then succeeded each other at its head, such as the Oraison, Agoult, Alamanon, Tournefort and Pontleroy. Each one has contributed to the care and development of this exceptional terroir.
The domain belongs to the Guénant family since 2001. They took the gamble to revive this place full of history, with incredible potential, but left abandoned at the time. The vineyard was the object of the first attentions and when the wine production regained its former prestige, the Guénant family then set about reconstituting the old almond, truffle and honey plantations.
Today, the residence is an exceptional place to stay and a renowned starred gastronomic table, offering cultural and historical spaces, but also high-end hotel services.
A unique land
The estate enjoys a unique location, in the crater of the only volcano in Provence, at an altitude of 400 m. It benefits from wide temperature ranges and diversified soils.
The grape varieties are divided for half between red and white. Thus, we find Grenache, Syrah and Cabernet-Sauvignon for the former and Vermentino, Sauvignon and Semillon for the latter.
The choice of a reasoned agriculture
The work carried out is rigorous and meticulous. It is based on traditional practices, whether it is the care of the vines or all the stages of wine production. The domain is led in reasoned agriculture not only for the vines, but also for the last seven years, with the replanting of an almond grove made up of varieties adapted to Provence, a truffle farm and a hundred or so beehives allowing the production of honey all flowers.
These complementary cultures extend over more than 11 hectares. The global approach is thought to take care not only of the environment, but also of human health and animal welfare.
The wines
The Villa Baulieu white cuvée is a fresh, complex wine with a hint of acidity, made from a blend of Sauvignon and Vermentino.
The red Villa Baulieu cuvée is made up mostly of Syrah blended with Vieux Grenache and Cabernet Sauvignon grapes. It is a fine, harmonious and elegant wine.
The white Cuvée Bérangère is a full-bodied, gourmet wine with citrus aromas and notes of fennel, cumin and spice.
The Baulieu Rosé Cuvée Coteaux d'Aix en Provence is a fresh, intense wine with a pale color. Made from Syrah and Grenache grapes, its citrus, white peach and apricot aromas are perfect with shellfish, Mediterranean dishes or white meats.
