The winemaker
The History of Aeolian Domain
Domaine d'Eole was created in 1993 by Pascal Moncelli. He settled on 17 hectares, whose vines were previously operated by an associative cellar. Shortly after the creation, Matthias Wimmer, the current director of Domaine d'Eole, joined the adventure.
From the beginning, the estate began its transition to organic viticulture. At that time, it produced an average of 500 hectoliters annually, divided between two red wines, Cuvée Léa and Eole Rouge, and a rosé wine.
The Domaine d'Eole was bought in July 1996 by Christian Raimont who decided to totally restructure the vineyard. 13 hectares were then pulled out and replanted, while 17 hectares were progressively purchased.
In addition, the winery was developed with the construction of an extension for the barrel cellar in 2003. New vats are installed to be able to handle the production which is constantly increasing.
In 2017, Grenoble businessman Marc Rebouah bought Domaine d'Eole. In 2018, oenologist Ludovic Vançon joined the team and assists Matthias in managing the vineyard.
The Domaine d'Eole vineyard
The vineyard of Domaine d'Eole is certified AB controlled by Ecocert since 1996. The farm does not use chemical phytosanitary inputs, but home-made preparations and Bordeaux mixture, composed of sulfur and copper. Weed killers are also banned in favor of manual work of the soil.
The restructuring that Domaine d'Eole has undergone has allowed the proportion of Carignan to be reduced in favor of Syrah. The white parcels were extended. They were first planted with Vermentino (or Rolle) and Roussanne. Since 2002, the proportion of Grenache Blanc has increased at the expense of the other white grape varieties.
The wines of Domaine d'Eole
K d'Eole red 2016
The 2016 K d'Eole red is an exceptional vintage. The wine is made exclusively from the Carignan grape and the vintage is only made in years when the old Carignan grapes, over 50 years old, and with minimal yields stand on their own.
The red wine offers a nose bursting with delicate scents of violets and ripe black currants. The violets mingle with red fruits on the palate. The wine is very well balanced, with silky tannins. An excellent wine for aging, it gains aromatic complexity over time.
Aeolian Breath rosé
Souffle d'Eole is a rosé wine, guaranteed without added sulfites. It is made from a blend of 50% Grenache, 25% Counoise and 25% Carignan. Souffle d'Eole represents the archetypal pure and fresh rosé, ideal for summer, lunches in the garden and family barbecues.
The wine is clear and elegant. It first seduces with its light pink, subtly orange color. The nose is delicate, imbued with peach, honeysuckle and wild strawberry. The mouth is subtle, very lively and long. Souffle d'Eole offers a very appreciable minerality.
