Hand-picking, short cold skin maceration, whole-cluster vinification - with the stalks - enriches the wines' range of aromas, and slow, gentle pressing under inert gas to protect the pressed juices from oxidation. Our efforts have not been in vain: Blanc de Rolle 2017 brings freshness supported by a lively, persistent structure. The aromatic profile is delicate, with aromas of white fruit, white flowers, hawthorn and a hint of boxwood. The palate is full-bodied and well-balanced, with a long, pleasant finish of bitter fennel and aniseed. A wine for spring fever, for the first asparagus and grilled fish of the season.

The color is pale with hints of light lime and shades of gray.
Aroma
The aromatic profile is revealed through its minerality, marked by notes of flint. Box flower aromas give way to marine, iodine and lemon notes.
