The Clos Mirages adventure In 2019, Cécile and Hervé Paillard discovered a small vineyard in the heart of the Saint Tropez peninsula, between the beaches of Ramatuelle and the Massif des Maures. Palm trees, cypresses, saffron facades and red shutters, old but vigorous vines, pine forests...it's love at first sight! Oriane, Thibaud and Héloïse, their three children, also fell in love with the place. In 2020, the family moved into an outbuilding and set about revitalizing the estate. Enthusiasm made up for a lack of skills, and everyone pitched in. Clos Mirages is born! Growing grapes Clos Mirages is classified in its entirety as an Appellation d'Origine Protégée (AOP) Côtes de Provence. The entire estate is farmed organically, certified by Ecocert and by a pair of resident hares. Left uncultivated for years, the vines are old (35 to 50 years): they require a lot of care and produce excellent grapes. To strengthen them, we decided to launch a vast complantation campaign: young plants grow in the shade of their elders. Wine Mastery As with the cultivation of the grapes, the vinification is certified organic, with a few little extras: - The grapes are harvested at night, using a mixed method (manual and mechanical) during favorable lunar cycles. - Immediately processed on site, the grapes are sent to the press or vats by gravity. - The large capacity of the winery allows each plot to be vinified separately. - Stainless-steel, concrete or wood vats allow the wines to express their personality - Yeast and other inputs are all natural and certified organic - Blending is carried out under the direction of our oenologist, with the sensitivity of the family gathered in the vineyard for the occasion. - Rosés are bottled as orders come in. - Reds spend at least 1 year in barrel - The emphasis is on sales to individuals, wine merchants and restaurants in the region. The Sense of Hospitality At Clos Mirages, you'll be welcomed by a family who live and work on site. We'll listen to your wishes, but there are a few imperatives linked to agriculture and the protection of nature. You'll be able to observe and even take part in the various activities, but you'll also have to put up with a few inconveniences: we haven't yet found a silent electric tractor!
