The winemaker
Château des Trois Sautets is the latest addition to the prestigious Palette appellation d'origine contrôlée, created by the three Chaullier brothers in Meyreuil. Château des Trois Sautets is also a goat breeder. For the past twenty years, Laurence Chaullier, the three brothers' mother, has settled just outside Aix, producing organic goat cheeses, and above all organic Brousse du Rôve AOP. The wines are made to match the cheeses perfectly. The estate practices a highly sustainable method of cultivation: viti-pastoralism. Goats graze on the terraces in winter, and manure is added to the vines as a fertilizer.
