Côt or "Malbec" is an old grape variety, once widespread on the Cher hillsides. Harvesting method: mechanical, from vines over 30 years old. Vinification: grapes macerated in stainless steel vats for 10-12 days, then pressed in a pneumatic press, temperature-controlled fermentation, aged on fine lees, stabilized, clarified, bottled in September.
