This cuvée, a nod to the family's foremothers, comes from old Sauvignon vines, with limited yields, on selected plots. The 2018 vintage won a silver medal at the Concours Mondial du Sauvignon 2020! Harvesting method: mechanical, very early in the morning to ensure a fresh harvest. Vinification: pneumatic pressing as soon as harvested, static cold settling 24 hours later, low-temperature fermentation, ageing on fine lees, stabilization, clarification, bottling in Spring.
Appearance
A sparkling pale color with green highlights, this wine has a beautiful concentration of substance, yet is brilliant and limpid.
Aroma
Aromas of white fruit, notes of white flowers and citrus. Lovely honeyed structure.
