Grape variety: 100% Pinot Noir Hand-picked in small crates to preserve all the berries' qualities, the harvest is sorted and destemmed. Following a pre-fermentation cold maceration (6°C) to optimize aromatic concentration, the wine begins a 2-4 week fermentation. During this period - between 18 and 25 degrees Celsius - several punch-downs and pump-overs are carried out. The result is a full-bodied, structured product that has retained all its fruit aromas. The wine then spends 9 months in oak barrels from the Tronçais and Bertranges forests. There, it undergoes malolactic fermentation, allowing it to become rounder and more refined. Its ruby-red color is limpid and brilliant, Pinoté nose with notes of violet and spices and spices. The palate is powerful, full of fruit with good structure. Often used as the only wine in a meal, it's amazing with fish, game birds, rabbit, veal... and also your charcuterie platters.
