In a few words ...
Our Sancerre parcels are located southeast of Sancerre, on flinty arigle and clay-limestone soils. The terroirs are located in Ménétréol-sous-Sancerre, Thauvenay and Bannon. The vines are planted with grass or hoe, depending on the soil. Harvested when ripe, the grapes are pressed slowly to preserve their inimitable quality. Slow fermentation at regulated temperatures of 12 to 18°C lasts 3 to 5 weeks. The wines are then aged on lees with regular stirring for 2 to 5 months, developing their fullness and length on the palate.
