Soft pink with hints of orange. Ripe fruit fragrance with hints of peach reflected on the palate. Harmonious, balanced and fine, with lightly spicy notes. The vines are planted on limestone soils that give the grapes their characteristic mineral fruitiness. After harvesting, spontaneous fermentation takes place in stainless steel tanks at a controlled temperature of around 18°c. The wine is then matured in vats for some time before being sufficiently balanced to be bottled and marketed. In 1963, a number of quality-oriented winegrowers in the Sancerre region joined forces to bottle and market their wines together. Just half a dozen winemakers founded the caves de sancerre cooperative in the heart of the region, in the village of sancerre. Although the number of members has now increased, it remains the only cooperative in the region. Its strengths lie in effective control of harvest quality requirements and cellar techniques, as well as highly efficient processes that guarantee exceptional value for money in the wines it markets.
