In a few words ...
Long, gentle pressing (4 hours 30) with juice separation and separate treatment. Cold settling after 24 hours. Yeasting (neutral yeast). 100% fermentation in stainless steel and enamel tanks at low temperature (between 16° and 18°). Aged on fine lees with stirring. Racking and blending in April-May. Fining Filtration and bottling in early summer.
