From vines over 30 years old, in organic transition. We are committed to respecting the terroir and letting it express itself in the best possible way. Each grape is sorted and selected at harvest and in the cellar upon reception. Our gravity-fed winery enables us to produce wines with the utmost respect for our grapes. Slow, light pressing to optimize fruit purity. We vinify our flint and clay-limestone terroirs separately with indigenous yeasts, then leave the wines to mature on fine lees for 9 months to bring out all the complexity of our terroirs and create balance.
A white Sancerre worthy of the greatest, with an aromatic nose that invites tasting. On the palate, the attack is frank, the wine has an almost perfect balance between freshness and roundness, and the finish is slightly smoky, calling for another sip.
