Quincy j. De villebois is defined by its lightness and freshness. We seek this subtle balance by picking 'fresh' and 'mūrs' grapes. Attentive to the ripeness of each plot, the harvest date is carefully chosen according to the aromatic peak of the grapes. The grapes are harvested at night to preserve all their aromas. The juices are extracted cold and meticulously protected from oxidation before fermentation at low temperature in stainless steel vats.
