In a few words ...
Fermented and aged in oak barrels, 30% of which are new, in our old cellars in the heart of the village of Sancerre. The alchemy between these exceptional terroirs, the wood of the region's oak forests (Allogny, Saint-Palais) and the climate of the cellars can take place. The wine is stirred regularly to re-suspend the lees. After light filtration, it is bottled the following winter. 6000 bottles in production.
