The winemaker
Philippe Auchère is a winemaker based in the commune of Bué, a stone's throw from Sancerre. A lover of good living and gastronomy, Philippe studied pastry-making before finally taking over the estate from his father Jacques Auchère in 1995. Jacques Auchère supported him for 3 years and accompanied him in his early years.
Today, Philippe's vineyard covers 7 hectares, 5 in AOC Sancerre and 2 in AOC Côteaux-du-Giennois.
Philippe's approach to vineyard management is based on the principles of reasoned management and respect for nature: the plots are carefully tended to preserve soil structure and encourage biodiversity. Hoeing and mowing are the two methods he has chosen to maintain his plots. The use of micro-tractors, which are lighter and consume less energy than high-clearance tractors, has been introduced on an occasional basis to limit soil compaction and reduce CO2 impact.
Self-taught and passionate about his work, he adapts to the specific characteristics of each of his different plots, in order to produce the finest possible harvest each year, when Mother Nature allows. The terroirs he farms in Sancerre are predominantly clay-limestone. By contrast, the Coteaux-du-Giennois vines on the other side of the Loire are planted on flinty clay terroirs. From his 13 different plots, he makes no less than 5 different cuvées in Sancerre, 2 cuvées in Coteaux du Giennois and some ephemeral cuvées depending on harvest volume and possibilities. Philippe has chosen not to yeast his wines every year since he began. They all ferment with indigenous yeasts, naturally present in the juices. No acidity correctors or deviant inputs are added to his wines. This choice is clearly expressed: each vintage is typical and different, reflecting its year and terroir.
The desire to take a responsible and ecological approach can also be seen around the winery: Gaston, a pig, tends the adjoining undergrowth. Rasta, Rockett and Lola, Ouessant sheep, look after the green spaces, and finally, a few hens come to take care of any slugs that might make their way into the vegetable garden. It's in this authentic family setting that Philippe flourishes every day.
Today, Philippe's wines are sold in France, but are also exported to the United States, Switzerland and Belgium.
