In 2017, david landron set up in the heart of the muscadet capital, vallet, on the aufrère farm, which extends over 130 hectares, mostly devoted to mixed farming. David farms 6.5 hectares, mainly growing melon de bourgogne in the muscadet, muscadet sèvre et maine and vin de france appellations, and a little folle blanche in the vin de france appellation. The estate has been in organic conversion since 2017 and 2019, depending on the terroir, which is composed of granite, schist and silt. No herbicides or pesticides are used, apart from a little sulfur and copper, applied homeopathically to treat disease. The grapes are harvested and sorted by hand, before being delicately pressed. The winemaking process is based on the same philosophy: no inputs, apart from a little sulfur to help the wines find their balance. Maturation takes place in stainless steel, concrete, aerial and underground vats, on lees for 6 to 14 months, using indigenous yeasts. david landron's cuvée crécerelle is made from burgundy melon grapes aged for 24 months in underground vats.
