The winemaker

The farm has 7 hectares of vines and half a hectare of fruit trees. The winery and reception/tasting area are housed in traditional Tourangeaux premises dating from 1864. The cellar is equipped to control temperatures to optimize the quality of the wines produced. Cellar equipment is also adapted to minimize grape crushing. Bottles are stored in cellars dug into the "tuffeau" rock, or in isolated premises. The vineyards, which are cultivated using integrated methods, are mainly located on flinty sands, with many stones on the surface. Clay is found at depths of 1 meter and more. Quality wine-making begins with respect for the natural environment in the vineyard, so as to obtain grapes of optimum quality. The soil is either naturally grassed or worked to control vine vigor (essential for healthy, high-quality grapes). Grass cover has a "buffering" effect in the event of excess rain, and also preserves the soil's microbial life. The grape varieties are Chenin for the whites and Grolleau for the rosés in the TOURAINE AZAY-LE-RIDEAU appellation, and Gamay and Cabernet for the reds in the TOURAINE appellation.
