The winemaker

CULTURE: The Louis Métaireau Domaine Grand Mouton is between Sevre and Maine, in the heart of the Appellation Muscadet, in the municipality of Saint Fiacre sur Maine. His old vines, the oldest of which were planted in 1937, are deeply rooted in an exceptional soil composed of gneiss, garnet amphibolite, which give the wine its minerality and freshness. In order to sauvergarder for many years the old vines, harvesting are done by hand. We also chose to practice Fight Reasoned respectful farming method of the environment that involves a precise and permanent observation of our vineyards. WINE MAKING: After the harvest taking place in September, what is happening in the cellar? After remaining on their "lie" during the winter in our concrete and glass tanks, the wines are carefully selected before the set spring bottles. The real setting binds arose from an ancestral craft practice. In the spring, after each harvest, it was to sample the wine over its lees without any manipulation péalable or filtration. To continue this tradition, most of our production is bottled in these rules, simply by natural gravity. SHARING: Sharing and conviviality are the culmination of our work throughout the year. Our field is located in the heart of the appellation and the heart of our concerns, between respect for the heritage of expertise and innovations. Some of the very good wine is not just reserved for connoisseurs, we want our Muscadet is appreciated everywhere and for everyone.
