As time went by and he tasted more and more "canons", his taste for natural, living wines was affirmed.
In 2009, during a road-trip, he met a group of Australian winemakers who had started from nothing and were completely free. On his return to France, he began training as a winemaker in Alsace (BPREA in Obernai). In 2014, he discovered the vineyards of Oudon on the Coteaux d'Ancenis, right between Nantes and Angers. The vines, run conventionally, were up for grabs. The winery is fully equipped.
