The winemaker

The history of the estate


Domaine du Fay d'Homme has been a family estate for five generations, based in the commune of Monnières, with extensions in Gorges, Maisdon-sur-Sèvre and Mouzillon. The vineyard is right in the Muscadet-sèvre-et-maine appellation.

Vincent Caillé has been at the helm of the estate since 1986, and makes it a point of honor to pursue a policy of quality production and respect for terroirs.

Like the hummingbird in the Armenian legend who worked alone in the face of the forest fire, Vincent Caillé has been involved in these environmental battles for over 25 years, even though he's only part of a surely ineffectual minority of winegrowers more than concerned about their terroir.

Terroir


The vineyard is planted with a few grape varieties: melon de bourgogne, folle blanche (large plant), gamay, abouriou, côt and cabernet.

Cultivated soils vary from gneiss to gabbro or orthogneiss.

The Fay d'Homme estate has been officially converted to organic farming since 2007, and to biodynamic farming since 2012 (by the Ecocert and Demeter labels). However, cultivation has been "organic" since 1996.

In the cellar, vinification is as natural as possible, favoring indigenous yeasts and long maturation on lees.

The wines


At Fay d'Homme, Vincent Caillé produces biodynamic wines typical of the Nantes region. The Muscadets are lively and easy-drinking, in keeping with the Atlantic terroir, but also offer a singularity thanks to natural ageing.

The cuvée Terre de Gabbro is aged in amphorae, while the cuvée Terre de Gneiss is aged in concrete eggs, setting these cuvées apart from the region's traditional wines.

The Gorges and Monnières-saint-fiacre crus also exude a strong identity. The former is powerful and austere, while the latter is dense and markedly reduced.

White wines are particularly good for laying down.
