The winemaker

The history of Domaine Fouassier


The Fouassier family belongs to the oldest dynasties of winemakers in Sancerre and its region. At the end of the 19th century, before the phylloxera crisis hit, 500 winegrowers lived together on these lands. There are only about ten of them left today.
As the crisis came to an end in 1902, Jules Fouassier planted the Clos Paradis by innovating with a trellis of acacia stakes - which remains today - at a distance of 1.20 meters per square. At that time, contrary to popular belief, donkeys were used to work the vines, as some narrow plots were planted with 80 centimeters between rows. Jules Fouassier was also a precursor in using sulfur and copper to fight against mildew and oidium.
Gustave took over from his father Jules, before passing on the estate to his son Raymond in the mid-1930s. In 1966, Pierre Fouassier, Raymond's eldest son, joined the estate and began to develop its commercial activity. The vines then covered 10 hectares.
Jean-Michel, Pierre's son, joined the family business in 1971. Today, Benoît and Paul represent the tenth generation of the family to operate the Fouassier estate.

The Domaine Fouassier vineyard


The Domaine Fouassier vineyard covers 59 hectares, mostly planted in Sauvignon. It is conducted in biodynamic agriculture, respecting the lunar calendar. The Domaine Fouassier belongs to the Biodyvin group which gathers winegrowers practicing Biodynamics.
Since the 80's, each parcel is vinified separately, in order to respect the specificities of the 4 terroirs of the Domaine Fouassier.

The wines of Domaine Fouassier


Due to the separate vinification of each parcel, the particularities of Domaine Fouassier wines depend on the terroir that produced the grapes.

- The chalky limestones of Bourges are also called Griottes or Groux. These are chalky soils, with a very thin layer of soil. The subsoil has few stones and mostly chalky slabs.
The wines of Griottes are fruity and light.

- The Buzançais limestones and the upper limestones are composed of layers of limestone and clayey marls. They are quite stony and deep.
- The marls of Saint Doulchard or Kimmeridgian marls are not very stony and more clayey soils which sometimes contain some fossils. They are difficult to work when the weather is too wet.
The wines from the marls of Saint Doulchard are fine wines to keep, fruity and long in the mouth.

- The flinty clay formations are the most stony. They accumulate the heat of the sun and accelerate the maturation of the grapes.
The wines from this terroir are mineral to a fault. They express a wide range of aromas and are excellent wines for ageing.
