    In a few words ...

    The grapes are pressed and then cold settled. Fermentation takes place in Burgundy barrels, using indigenous yeasts. The particularity of this crémant lies in its tirage method. The base wine of the previous vintage is drawn off using must from the current year. The base wine spends 12 months in 2-3 wine barrels and 1 year on laths. Zero dosage at bottling.
