The winemaker

History of the domain


In 2007, Mathieu Vallée will take over the estate, which will keep the same name to pay tribute to former enthusiasts. And so, the estate's history begins anew. You'll find 3 hectares of Chenin and 8 hectares of Cabernet Franc. Stéphanie arrived at the domaine in 2015, and the duo will take charge of running the vineyard. In 2019, the first grapes are harvested in the new winery. It is used to improve the quality of the wine. It's perfectly economical, as the structure is made of brick and the insulation is wood wool. Pineau d'Aunis was grafted onto a portion of Cabernet Franc. The second grape variety produced a new cuvée. Around 2021, the domaine will take over 4 hectares of vines in Parnay.

The characteristics of the estate


The estate's craftsman devotes himself to perfect workmanship. He prunes, de-trims, de-leaves... The owners grow with the vines and protect every vine stock. Château Yonne preserves the link between vine and soil. The soil is worked in such a way as to allow the roots to enhance the wine's personality. The craftsman also relies on the excellence of the flora and fauna. Insecticides are never used.

The vines at Château Yvonne are more resistant. This is due to the use of comfrey or horsetail to protect the vines. Each plot on the estate has its own strengths and weaknesses. Likewise, each vintage has its own characteristics. In 2021, the owners began planting trees on the estate to accentuate diversity. In this way, the landscape is not neutral.

The wines of Château Yvonne


The Château Yvonne estate invites you to taste its subtle red wines. "La Folie" is a bottle of red from limestone soil. It has a lovely fruity flavor. The power of this wine is perfectly balanced. Its crisp flesh is what makes it so famous. "Yvonne rouge" is a dense wine with fruity, spicy aromas reminiscent of licorice. "Le Beaumeray" is another red variety from Château Yvonne. It comes from Cabernet franc grapes and is one of the Top 10 wines in the world. Thanks to its qualities, this wine impresses even the most demanding palates.

You also have white wines on the menu. Yvonne Blanc" is a Saumur white from the banks of the Loire. It combines freshness and roundness in perfect balance. It is vinified dry. Château Yvonne's "Gory" is a dry white wine from clay soils. It is hand-harvested. You'll notice a hint of spice that enhances the flavors.
