Viticulture: environmentally-friendly practices, with soil cultivation designed to encourage biodiversity. Vinification & Maturing: Harvesting: by hand, allowing rigorous selection of bunches. Vinification: long maceration to extract the grape's tannins and aromas. Fermentation in temperature-controlled stainless steel vats. Maturation: aged in vats to preserve fruit purity and freshness. Tasting: color: intense garnet-red. Nose: expressive, with aromas of ripe red fruit (raspberry, cherry) and spicy, even slightly peppery notes. Palate: structured, but with supple tannins. Freshness and a fruity finish, typical of burgundies. Food pairing: ideal with grilled red meats, charcuterie, sauce dishes and mature cheeses.
