This Sélection Spéciale is one of the finest cuvées vinified by Catherine Delaunay, the oenologist behind "Les Jamelles" wines. Produced from old Grenache, Syrah and Mourvèdre vines grown on the finest Languedoc terroirs, it has been partly aged in oak barrels, with some of the Grenache and Mourvèdre harvested by hand to allow maceration of the whole harvest. Alcoholic fermentation takes place, along with a long maceration before pressing. The Syrah and the rest of the Grenache and Mourvèdre are fermented in temperature-controlled vats, followed by a long maceration lasting 2 to 3 weeks. During pressing, only the free-run juice and the juice from the first pressing are retained. Malolactic fermentation takes place in vats, followed by treading in February, before long months of barrel ageing. Some of the Grenache grapes are kept in vats to retain a lot of fruit. Catherine Delaunay then selects the best barrels to define her blend, which will rest for a few weeks after bottling.
