ACCORDING TO CURRENT VINTAGE To define a wine, you first need to know its terroir: an atypical climate that welcomes cold Atlantic winds and Mediterranean sunshine, Cabardès is the only appellation that requires a minimum blend of 40% Atlantic and 40% Mediterranean grape varieties. Maison Ventenac aims to offer unique, original wines with one guiding principle: respect for the grape and its organoleptic qualities. All production is subject to the same quality approach, from IGP Pays d'Oc to AOP Cabardès. Vinification : Harvested at night. Protection by dry ice in the vineyard. Sorting in the cellar. Pneumatic pressing. First juices processed under inert gas (nitrogen) at 5°C. Cold stabilization for 6 days and settling. Fermentation at 15°C in 300 hl stainless steel tanks. No malolactic fermentation. Ageing : 2 months on fine lees in cement and stainless steel vats.

A light white that goes very well with aperitifs. Well-balanced. Not very long on the palate, however. But perhaps that's not the point... Good value for money.
