    In a few words ...

    A vineyard designed for an exceptional wine entirely cultivated biodynamically. This approach places the energy of the soil at the heart of the process. Operations in the vineyard (pruning, ploughing, etc.) and in the cellar are governed by a calendar based on two main stars: the moon and the sun. The vine is in equilibrium with the soil, and fully expresses our terroir in our wines. The care taken in the vineyard aims to obtain a healthy harvest with a moderate yield (25 hl/ha), allowing us to extract the quintessential quality potential from these grapes. The harvest date is set, grape by grape, only when the grapes are at optimum ripeness and after daily tasting of the berries. Hand-picked grapes are pneumatically pressed as soon as they arrive at the winery. After a light static settling, part of the juice undergoes alcoholic fermentation in new barrels (70%), with the remainder vinified in stainless steel tanks (30%). Malolactic fermentation is carried out on the Chardonnay. Temperature control helps preserve freshness and aroma integrity. Barrel ageing lasts between 7 and 8 months until the Spring equinox, with regular stirring of the lees. After light fining, the wine is bottled.
