The vineyard is managed using Biodynamic methods. This approach places the energy of the soil at the heart of the process. Operations in the vineyard (pruning, ploughing, etc.) and in the cellar are governed by a calendar based on two main stars: the moon and the sun. The vine is in equilibrium with the soil, and fully expresses our terroir in our wines. The grapes are sorted, then each variety is vinified separately. Syrah and Carignan are vatted in whole bunches, then vinified by carbonic maceration, with a vatting period of around 15 days. Alcoholic fermentation is completed at low temperature. The other grape varieties are 100% destemmed, then vinified with traditional maceration for around 3 weeks. The wines are placed in new 225L barrels as soon as the maceration vats are run off. A selection of coopers is used to adapt the choice of wood origins and toasting methods to each vintage. The wine is kept in bottle for a minimum of 1 year before release.
