Harvesting is triggered by checks on ripeness, analysis of the polyphenols contained in the grape skins and daily tasting of the berries as harvest approaches. Harvested by hand, the grapes are transferred to the winery in containers, where they are meticulously sorted. Each grape variety and plot is vinified separately. Some of the Syrah grapes are vatted as whole bunches for carbonic maceration. The remaining Syrah and Grenache grapes are destemmed and vinified using traditional maceration methods. Once the vats have been emptied and malolactic fermentation has taken place, each grape variety and parcel of vines is put into barrels separately. Blending takes place after 12 months' barrel ageing. The wine is lightly fined before bottling.

Ruby-red with intense, slightly tile-like highlights.
