In the vineyard : - farming that respects soil, plants and people - in an unspoilt environment (good ecosystem) - 70% on old vines (50 years old) (steep slopes called "travers") - selection of plots 20 to 30 hl/ha of ripe grapes - manual harvest (a team of 12 pickers + 2 porters). at the winery - healthy grapes partially destemmed + fermentation with local yeasts - pumping-over limited to 1 per day per vat - followed by maceration under marc (2 weeks) with punching down (1 per day) or immersed marc - barrel ageing in January (3 to 9 year-old barrels).
