Appellation Rivesaltes

Under a Mediterranean climate, the terroir is composed of relief with granite soils, interspersed with pebbles and clay. The whole area is crossed by 3 rivers: the Agly, the Têt and the Tech.

An original process

The wines of this AOC undergo mutage, a process that appeared in the 13th century which consists of stopping alcoholic fermentation by adding wine alcohol. The result is the conservation of sugars and the enhancement of natural aromas. There are 3 types of wine: the garnet-coloured, amber-coloured and tuilé rivesaltes wine.

The 3 families of the AOC

The rivesaltes amber wine is made from the white or grey grenache, macabeu, malvoisie and muscat grapes. Its amber colour with floral notes and aromas of candied fruit goes perfectly with foie gras.
The garnet wine, for its part, made mostly from the garnet grape variety, has a dark red colour and intense red fruit aromas. It goes perfectly with a chocolate fondant.
Finally, the "tuilé" wine is made from the black, white or grey Grenache, Macabeu, Malvoisie and Muscat grapes. As its name indicates, its colour is tuilé. Its nose presents notes of cocoa or quince. It is the ideal companion for Cuban cigars.
