No vintage 75clPinot Noir comes from the Limoux region. It comes from vineyards specially trained to produce sparkling wines. This allows for slow ripening, favoring aromatic richness while avoiding excessive alcoholic ripeness. The Pinot Noir grapes are harvested by hand, to keep the berries whole and avoid coloring the must. Whole bunches are pressed progressively, stopping before maceration and the appearance of color and herbaceous notes. Most of the Chardonnay comes from the Limoux region, the rest from a late-ripening terroir in the Hérault. These late-ripening plots help to promote aromatic ripeness while maintaining moderate alcohol levels. The Chardonnay grapes are mechanically harvested at night, to keep the temperature as low as possible and avoid the onset of fermentation. Only the free-run wine is kept. Winemaking is carried out in our Marseillette cellars by Eric MOËC, who has extensive expertise in the production of sparkling wines with a number of renowned houses. Fermentation of Pinot Noir and Chardonnay takes place at low temperature (18°C) to extract the varietal aromas of each grape variety, and give complexity to the wine. The wines rest on lees for 3 months after fermentation. The selection of wines finally used for the prise de mousse is based on criteria of balance, aromatic richness and acidity. The prise de mousse (or second alcoholic fermentation in the bottle) starts after the addition of the "liqueur de tirage" (yeast + sugars). This second fermentation takes place in cool cellars (9 and 12° C), ideal for setting the foam. A 9-month ageing period on "lattes" allows the yeasts to break down and give complexity to the wine.

This effervescent wine has an attractive green-gold color with brilliant reflections.
Aroma
A lively nose gives off delicious aromas of exotic fruits (mango), dried apricot and buttery brioche.
