The winemaker

Domaine Pégaline is located in Claret, a small village in the heart of the Pic Saint-Loup appellation. It boasts beautiful hillsides with clay-limestone scree soils that are both draining and cool, a feature highly conducive to vine-growing. Philippe Martin trained as a labourer for some twenty years with a number of Languedoc winegrowers before meeting Nathalie Héricourt and setting up the domaine with her. The estate comprises five hectares of vines planted with Syrah, Mourvèdre, Grenache noir and blanc, Cinsault, Pinot Noir, Vermentino and Muscat petits grains. Although managed according to organic specifications since 2014, the plots are officially in their third year of conversion in 2021. One row in two is grassed, and the inter-row is ploughed. Philippe and Nathalie do most of the manual work, claiming to be both hands-on and decision-makers. Harvesting takes place in the morning only, in 10kg crates, and is accompanied where necessary by rigorous sorting to ensure that the grapes are stored in optimal conditions. In the cellar, fermentation starts spontaneously, with just the right amount of sulfites. Everything else is a matter of observation, tasting and passion!
