The winemaker
From livestock to vines, Le Mas des Chimères en Bio
For several generations, the Dardé family had worked the land in mixed farming: olives, vines and sheep. In the 1960s, the family abandoned livestock farming in favor of vines. By 1974, Guilhem Dardé was working with his father and uncle on the estate. In 1993, Guilhem decided to create Le Mas des Chimères: the creation of this private winery gave him the opportunity to vinify his own wines (until then, the grapes had been deposited at the local Cave Coopérative). His wife and daughter gradually joined him in the business. Organic: a real conviction, in fact, very quickly, all chemical products harmful to the soil and plants were abandoned. In this way, the terroir expresses itself in complete freedom. The vines are cultivated using organic methods and the wines are certified organic.
The Mas des Chimères vineyard: from terroir to vinification
Two types of soil exist on the estate. The "Terres Rouges", 250 million years old, where the Coteaux du Salagou Vins de Pays are produced, and the basaltic plateaus (located at altitude) where the Dardé family produces the Coteaux du Languedoc AOP/AOC and Terrasses du Larzac AOCs. To ensure that only bunches in perfect condition are picked, the grapes are harvested by hand. Once the grapes have been destemmed and placed in vats, the Dardé family aims to intervene as little as possible. The yeasts used for vinification are sulfite-free.
Mas des Chimères red wines
Among the red wines, there are two main categories:
Assemblage wines:
- "Terrasses du Larzac- Nuit Grave": a gourmet, fresh wine based on a blend of Syrah (majority), Grenache and Mourvèdre. It's a complex, gourmand and fresh wine. -Terrasses du Larzac - Caminarèm": an equal blend of Cinsault, Carignan, Mourvèdre, Grenache and Syrah. -L'Hérétique: a blend of Merlot and Cabernet. "L'œillade" (a gourmet pure Cinsault with red and black fruit aromas) and "La Cuvée Marie et Joseph" (a pure Carignan autumn wine), provide an insight into the Languedoc's oldest grape varieties.Other Mas des Chimères wines
In the white wine ranges, there's "Le Blanc", an ideal aperitif wine for Larzac cheeses, "Muscat petits grains" (a highly perfumed dry Muscat made from late-harvest grapes) and "Muscat petits grains doux" (an over-ripe wine that retains a natural sugar content). Finally, the domaine offers "Le Rosé", a gourmet wine with more color than traditional rosés (rosé de saignée).
