The Mas Cal Demoura is a vineyard located in the commune of Jonquières, about thirty kilometers northwest of Montpellier, in the department of Vaucluse, in the Provence Alpes Côte d'Azur region. It produces wines of all colors, typical of the terraces of Larzac, in the heart of the Languedoc hillsides. Cal Demoura means "You must stay" in Occitan. The winemaker
The History of Mas Cal Demoura
Mas Cal Demoura was founded in the early 90s by Jean-Pierre Jullien. It is now operated by Isabelle and Vincent Goumard who bought it in 2004. The couple has worked hard to develop the estate, including the purchase of new parcels, including the Combariolles, which has earned it a reputation for excellence.
The winemakers display a desire to focus on quality over quantity. Since 2014, they benefit from the Appellation d'Origine Contrôlée Terrasses du Larzac. The vineyard holds organic certification and produces an average of 45,000 bottles per year.
The Mas Cal Demoura vineyard
The Mas Cal Demoura vineyard covers 16 hectares: 12.8 hectares in red and 3.2 hectares in white. The average age of the vines is 40 years.
The red grape varieties are Syrah (30%), Grenache Noir (25%), Mourvèdre (20%), Cinsault (10%) and Carignan (15%). The white varieties are Chenin (55%), Grenache Blanc (25%), Roussanne (10%), Carignan (5%), Viognier (3%) and Petit Manseng (2%).
The vineyard benefits from the generous Mediterranean climate, balanced by the cool air of the nearby Larzac. The temperature differences between day and night during the ripening period contribute to the construction of a magnificent aromatic palette that preserves both freshness and acidity. The soil is made up of limestone and clay-limestone gravel which contributes to the elaboration of deep and energetic wines.
The Mas Cal Demoura vineyard is managed in organic and biodynamic agriculture. Hedges have been planted to promote biodiversity, as well as nesting boxes for bats, so essential to the balance of wildlife. These measures reinforce the fauna and flora, as well as the natural defenses of the vine.
No chemical products are used. The natural preparations are made of horn dung, silica, herbal teas and decoctions of plants.
The wines of Mas Cal Demoura
Sacred Fire - red - AOC Terrasses du Larzac
The Feu Sacré from Mas Cal Demoura is made from a blend of 70% Grenache, complemented by Carignan and Syrah.
The very old Grenache comes from the clay-limestone plot of Gineste, just south of the Jonquières terroir. It is a particularly fresh wine that honors the AOC Terrasses du Larzac.
The Sacred Fire is full of ripe fruit and sweet spice flavors. Its tannins are silky and improve with time.
Paroles de Pierres - white - IGP Pays d'Hérault
Paroles de Pierres is made from a blend of 70% Chenin, complemented by Grenache Blanc, Roussane and Petit Manseng.
The grapes come from the highly acclaimed Combariolles parcel. It is a fresh and mineral wine, deep and particularly long in the mouth.
