The winemaker

The history of the Ermitage du Pic Saint Loup

In the 1950s, Ermitage du Pic Saint Loup was a private winery offering VDQS (appellation d'origine Vin Délimité de Qualité Supérieure), as well as other more diverse wines. The winery was mainly used to store and process the farm's sheep's milk, which was used to make Roquefort cheese. In 1951, the village's cooperative winery was created by the son-in-law of the owner of Ermitage du Pic Saint Loup.

In 1970, the new manager became more interested in viticulture than sheep farming. He planted Syrah vines to develop the business. In 1992, his heirs, the three Ravaille brothers - Jean-Marc, Pierre and Xavier - took over the business and turned it into a flagship of the Pic Saint Loup appellation.

The Ermitage du Pic Saint Loup vineyard

The Ermitage du Pic Saint Loup vineyard backs onto the foothills of the mountain range. It extends over 40 hectares, 30 of which are dedicated to red wine and the last 10 hectares to white. The average age of the vines is 50 years. Average production is 110,000 bottles a year.

The soil is made up of extremely varied terroirs of red earth, pebbles, gravel, clay, hard limestone, soft limestone, conglomerates, dolomites, limestone scree of fluvial origin and marl. The climate is distinctive, with marked thermal amplitudes: hot days and cool nights.

The estate has been certified as organic farming since 2012. It is now run entirely using biodynamics. The soils are ploughed without using any pesticides. Harvesting is manual and carried out very early in the morning to take advantage of freshness and minimize the risk of fruit spoilage.

Le Classique Rosé de l'Ermitage du Pic Saint Loup

All these aromas can be found on the palate, to which are added flavors of licorice and hints of garrigue.

The palate is full and fresh, with a long, lingering finish that lets you enjoy the incredible cocktail of flavors in Cuvée Sainte Agnès.
