The winemaker
North of Béziers, in Languedoc Roussillon, stretches the vineyard of the Cru Saint-Chinian appellation. At the heart of this terroir in the Haut Languedoc Regional Nature Park lies Domaine Rimbert. Winemaker Jean-Marie Rimbert has been passionately cultivating the vines here since 1996. Jean-Marie Rimbert is no local boy, having grown up in Provence, and brought with him all his know-how. The 28 hectares of vines are planted on hillsides. The winemaker cultivates traditional grape varieties such as Carignan, Grenache and Cinsaut, as well as Syrah and Mourvèdre. He has succeeded in imposing his own method for producing fruity, low-alcohol wines.
Domaine Rimbert is located in the Saint-Chinian schist area at an altitude of around 250 meters. The terroir, located in the commune of Berlou, is rich in old Carignan vines. Jean-Marie Rimbert has decided to restore this long-forgotten and much-maligned grape variety to its former glory by creating the cuvée Carignator. The estate covers 28 hectares of old vines, some of which are over a hundred years old, giving modest yields but exceptional quality.
Work on the wines in the estate's semi-underground cellar is light, since the aim is to create wines designed to be consumed young. Carignator, the estate's flagship cuvée, is a 100% Carignan wine, organically grown. Its nose is vegetal, its structure tannic. It's ideal with powerful meats like wild boar and hare, or finer meats like duck and quail.
