The winemaker

On a family property of 3 generations, in a small village in southern France, Languedoc-Roussillon, 30 km from Béziers, Sébastien COLLOT restructured and replanted the vineyard of 20 hectares since 2003. By Appellation AOC SAINT-Chinian, in a Mediterranean climate, warm and sunny, the clay-limestone soils of the vineyards can produce very low yields and strong red wines, powerful and fruity. The grape varieties are composed of Syrah, Grenache, MOURVEDRE, Viognier and CARIGNAN on old vines 65 years of age, grape once widely cultivated in Languedoc, offering wines on hardiness. The harvest is picked by hand by seasonal staff for a good selection of grapes. The wine making is traditional, varietal wines tank. Our selections of old vines are devoted to our premium wines in which we are looking good aromatic structure through a longer maceration. Aging in oak barrels is practiced to our premium SECRETS OF PAUL, on drums 2 see 3 wines for a search before any breeding. For white and rosé wines, we work on press wines.
