The winemaker
The adventure begins on a "whim" in 2003, with 6.5 ha, first solo. Today we are three on the field (with Kikito to the vine, and Lorelei "multipass"), and these are thirty plots for fifteen hectares are worked with love and respect for life and balances. Calce is a small limestone piece torn from the Corbières and fractured by the birth of the Pyrenees. The numerous vertical faults that cross the plateau, have given birth to many east / west oriented valleys where variations of calcareous soils, marl and shale read the meter. The wines are mostly assembly varietal wines but especially soils. Win in complexity by the soil diversity. Carignan, Black Grenache, Syrah and Mourvèdre for the red articulate; Maccabeu, Grenache Blanc and Gris for whites. The wind regime (north wind and marine) very strong on this small promontory allows for naturally fresh balance in the Mediterranean wine yet. The work of vines and soil in organic farming and biodynamic also allows to reach this quest digestibility and sincerity. Labors light winter and / or spring, natural grass, summer mowing, herbal treatments in addition to sulfur, biodynamic sprays (500 essentially). The crop is transported in small crates from the stump to the cellar. For red: sorting in the vineyard, not systematic stalking, steeping and manual racking, fermentation "indigenous", no acidification or enzyming, moderate and inconsistent use of SO2, maceration in concrete vats, aging in concrete or old half barrels. For white: delicate pressing, light settling, slow natural fermentation (alcoholic and malolactic) mostly in old barrels of 300 or 600 liters, Total lees stirring without raising or racking up the ante. All work in the vineyard or cellar are guided by instinct, with the lunar calendar as daily tools, without any claim to hold any truth whatsoever, but especially with the desire to guide the vine and wine according to his observations (often subjective).
