The winemaker
An exceptional terroir of Larzac
The Pas de L'Escalette estate is located between Millau and Montpellier in the Hérault. At an altitude of 350 m at the foot of the Larzac plateau, the vineyard extends over 20 hectares of vines, divided into about fifty terraces. Julien Zernott and his campaign Delphine are in charge of the management of the domain.
The vines are spread over limestone scree of the causse, surrounded by low stone walls and clapas. The vineyard is naturally irrigated by the Larzac springs. Between the altitude, the clay-limestone soils and the cool climate of the valleys, the conditions are ideal for producing wines that are as fresh as they are fruity, just like this incredible terroir.
In terms of grape varieties, we find exclusively endogenous: Grenache and Carignan for the majority of the blends. Syrah and Cinsault are also used. For the white wines, we have blends of white Carignan and Terret Bourret in old vines, as well as white and gray Grenache.
The Pas de l'Escalette estate has been certified in Organic Agriculture since 2012 and in Biodynamics with the Biodyvin label. The vineyard thus works to maintain the biodiversity of the soils in order to obtain grapes that reflect the environment and the terroir from which they come.
The wines
The Pas de l'Escalette estate produces classic blended and parcel-based cuvées in order to bring out the best of the Escalette's high altitude terroir.
The Mas Rousseau is a 100% Carignan parcel cuvée,the valley's ancestral grape variety. Golden in color, this wine offers an aromatic nose with notes of honeysuckle and white fruits. On the palate, the wine is delicate and long, with a saline finish. Perfect with seafood.
