The winemaker
The Domaine du Grès Vaillant, located near Limoux at the foot of the Pyrenees, is now run by Aigline de Causans and Laurent Maffeïs. This estate is steeped in history and has been cultivating vines for several centuries. It was founded in the 13th century by Benedictine monks from the Abbey of Saint-Polycarpe. Today, the vineyard covers an area of 7 hectares in a natural setting rich in biodiversity. Aigline de Causans and Laurent Maffeïs run the vineyard according to the principles of organic farming and with the support of their three draught horses for the work in the vineyard.
These horses are called Rustica, Colette and Carolus. In winter, sheep graze the plots. The geographical situation of the estate offers an ideal environmental quality for the vineyard. The vineyard benefits from a double climatological influence between the Mediterranean sunshine and the coolness provided by the Pyrenees mountain range. The soils are clay-limestone and rest on sandstone parent rocks. It is these rocks that have given their name to the Domaine. Whether in the vineyard or in the cellar, Aigline de Causans and Laurent Maffeïs are concerned above all with preserving the quality of the grapes and therefore the quality of the wines. They take care to bring to their wines the freshness and vivacity of their terroir, thus revealing wines that are as natural as possible and have great typicity.
