The winemaker
History
The history of Domaine de la Perdrix begins 200 years ago, in the 1820s. The first members of the Gil family arrived and laid the foundations of the wine estate. Wine became a family tradition, handed down from generation to generation. Over the centuries, the Gil family improved not only their winemaking processes, but also the way they worked in the vineyard.
The estate lived quietly for decades, expanding over time. It reached 32 hectares of vines in 1997, when André and Virginie Gil moved in. They settled in Trouillas and took over Domaine de la Perdrix. Together, they aim to promote this cherished gem throughout the year. Starting with the 2000 vintage, they are once again making wine in the cellar that used to be attached to the vineyard.
They attach great importance to the quality of their wines, as much out of respect for André's family ancestors as for their shared passion. It's a passion that's reflected in their cuvées, which have won numerous gold medals at agricultural and winemaking competitions. What's more, the couple have worked hard to achieve another goal: a conversion of the estate to organic viticulture. This became a reality in 2018...
Biodiversity first and foremost
So it's here, in the foothills of the Pyrenees, that the magic happens. 32 hectares of vines on which to admire a mosaic of soils with different exposures, altitudes and climatic influences. On some plots, yields are low, but this helps concentrate the few grapes, which then become of great quality.
Biodiversity is at the heart of André and Virginie Gil's project. Indeed, our protagonists seek to listen to and preserve nature, keeping that beautiful balance lavished by the surrounding forests. In their view, this is also the notion of "terroir"!
They have decided to use cultivation methods in line with their ideas: organic amendments, reasoned soil work and green work to limit treatments. It is through this vision that the grapes arrive at the winery as healthy as possible.
Vinification also follows organic guidelines (fewer authorized inputs), allowing the wines to express themselves fully. When blending, André and Virginie have just one aim: to bring out the Mediterranean side of their terroir in the wines they make. To achieve this, they look for balance, fruitiness, but also tannins and a certain ageing potential... Once again, the gamble pays off!
