The winemaker

Carignan centenarians old Grenache, Syrah elegant on hillsides gneiss and schists Latour seemed to invite us to create harmonious wines. We gave in 2001 the name of the Ausseil (Bird in Occitan) our adventure. Independent Winegrowers, we cultivate 10 hectares, a very small area, which allows us to take a very attentive care to our vines. We use the methods of organic farming. We prefer the softer and more natural methods, both in the vineyard and in the cellar. Thus we produce AOC "Côtes du Roussillon Villages Latour de France" natural sweet wines 'Rivesaltes' and local wines (red, rosé and white) of the Catalan Coast. The estate vineyards are located in the municipality of Latour de France. There are a part of old vines in Carignan (50-80 years), Syrah (30-40) Black Grenache (50-80 years). These old vines, the terroir of Latour, have extremely low yields, often less than 10-20 hl / ha. Moreover, we planted vines of Syrah, Mourvèdre, Grenache and Muscat. These young vines now have between 5 and 10 years.
